The Best Gift From Christmas, New Year's Resolutions & The Simplest Cookies & Cream Ice

I've never been much of a New Year's resolutions person- especially when it has to do with food. I think you are just setting yourself up for failure if you say you're going to totally give up anything! Are you really never going to have sugar again?! Not I! I live by two rules; 1) if I find something I like at the grocery store, but can't pronounce one of the ingredients, I just make it at home, and 2) everything is good in moderation (that goes for veggies and desserts!). In the spirit of moderation, below is the simplest cookie & cream ice cream recipe.

I maintain the best gift I gave over the holiday season was an ice cream maker. I bought one for myself just before Thanksgiving and it is a life changer! It is hard to go back to store bought ice cream #diva. I gifted my brother & his fiancé one with an ice cream sandwich recipe book (their favorite dessert) and I'm getting one for my little brother for his birthday in January. It's honestly perfect for anyone- kids, adults, sweet lovers, & health nuts (helllllllo "ice cream" that rivals Halo!). I keep saying I'm going to make a "healthy" ice cream next, but I haven't yet... there's always tomorrow... but for now, here's the simplest cookies & crème recipe:

Ingredients:

  • 1 cup whole milk

  • 3/4 cup granulated sugar

  • 2 cups heavy cream

  • 2 teaspoons vanilla extract

  • 1 cup coarsely chopped Oreos

Directions:

  1. Whisk together milk and sugar until sugar is dissolved. Stir in heavy cream and vanilla. Add in chopped Oreos.

  2. Freeze mixture for at least 4 hours (but overnight is best!).

  3. Churn ice cream in maker for 25 minutes.

  4. Transfer to container and freeze for 2 hours.
