Ground Chicken & Shrimp Sliders with Asian Slaw, Sriracha Mayo and Topped with Crispy Wontons


If you know me, you know I love burgers, beef burgers that is. I've been trying to add a little more chicken into my life. When faced with the challenge of trying to incorporate ground chicken into a burger that didn't taste bland (don't get mad at me chickens and/or chicken lovers!), I immediately thought of a spicy Asian slaw. The addition of shrimp give the chicken patties a lil' something extra. And the crispy wontons? Well, I never miss an opportunity to top my burgers with something fried.

Ground Chicken & Shrimp Sliders

  • 2 pounds ground chicken (*see note below)

  • 1 pound shrimp, roughly chopped

  • 2 tablespoons fresh ginger, minced

  • 2 tablespoons garlic, minced

  • 1/4 cup hoisin sauce

  • 4 teaspoons soy sauce

  • 1 jalapeño, minced

  • 3 teaspoons hot Asian chili sauce

  • 1 bunch cilantro, roughly chopped

  • 1/4 cup panko breadcrumbs

  • Hawaiian sweet rolls, to serve

  1. Preheat grill.

  2. Combine ginger, garlic, hoisin sauce, soy sauce, jalapeño, chili sauce, and cilantro in large bowl and mix well. Add in ground chicken and shrimp. Sprinkle panko breadcrumbs over mixture and gently combine and form into sliders.

  3. Grill until cooked through, about 20 minutes.

  4. To serve, slather Sriracha mayo on Hawaiian sweet rolls, top burger with slaw & crispy wontons... eat!

*Note- You can either buy ground chicken or grind your own chicken. I used a meat grinder to grind deboned chicken thighs. The benefit to grinding your own chicken is that you can throw the shrimp in with the chicken so it could all grind together.

**Note- I served them once without cheese and once with a little slice of pepper jack- both were good!

Asian Slaw

for salad:

  • 1 head red cabbage, shredded (* see note below)

  • 1 head green cabbage, shredded

  • 3 whole carrots, peeled and shredded

  • 1 small red onion, thinly sliced

  • 1 bunch scallions, trimmed and thinly sliced

  • 1 jalapeño, thinly sliced

  • 1 bunch cilantro, roughly chopped

for dressing:

  • 1/4 cup soy sauce

  • 1/4 cup lime juice

  • 1/4 cup vegetable oil

  • 2 tablespoons fresh ginger, minced

  • 3 cloves garlic, minced

  • 2 tablespoons white vinegar

  • 2 tablespoons dark brown sugar

  • 2 teaspoons sesame oil

  • 2 teaspoons sesame seeds

  • salt, to taste

  • fresh ground pepper, to taste

Mix dressing ingredients together and chill dressing for at least an hour before dressing salad. Mix together salad ingredients. Do not put the dressing on the salad until you are ready to serve, otherwise your slaw will get wilty.

*Note- I think the best way to shred cabbage and carrots is with a cheese grater!

Sriracha Mayo

  • 1 cup mayonnaise

  • 3 tablespoons Sriracha (or more to taste!)

  • 2 tablespoons fresh lemon juice

  • kosher salt, to taste

Mix all ingredients in small bowl to combine. Chill for at least an hour prior to serving.

Crispy Wontons

  • Wonton wrappers, sliced thinly

  • Peanut Oil

Heat oil over medium high heat. Fry sliced wonton wrappers until crispy.

Boom. Done. How easy was that? AND how delicious is this ground chicken patty??? RIDDLE ME IMPRESSED, chicken.
