Cranberry Orange Bread
Ingredients:
¼ cup butter, softened
¼ cup vegetable oil
¾ cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1 tablespoon fresh orange juice
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon allspice
1 cup sugar
zest of 1 orange
1 ½ cups all purpose flour
½ teaspoon salt
1 teaspoon baking powder
fresh cranberries (anywhere from 1 cup to 1 (12oz) bag)
Directions:
Preheat oven to 350 degrees and grease a bread loaf pan.
In mixer, combine butter, oil, buttermilk, eggs, vanilla extract, and orange juice until thoroughly mixed.
Add cinnamon, nutmeg, all spice, sugar and orange zest and mix well.
In separate bowl, mix together flour, salt, and baking powder.
Add dry ingredients to wet mixture and gently mix until just combined. Pour into greased loaf pan.
Bake until a toothpick comes out clean. This can be anywhere from 50 to 75 minutes, so keep an eye on your bread. If the top starts to brown, but the middle is not cooked yet, you can cover the bread with foil until it is finished cooking.
Let cool for at least 30 minutes before serving.
