Welcome Home Banana Cream Pie
Chase was coming home from a trip offshore and he told me all he wanted was banana cream pie. Banana cream pie?!? I had heard of it, but I can't say I had ever had a piece. It just wasn't a dish I would ever crave. Well it wasn't anything I'd crave- until I had a piece for myself. That was five years ago- you can call me a banana cream pie devout now... here's how I make it...
Ingredients:
Crust:
1 cup vanilla wafer cookies, crushed
1/2 cup graham crackers, crushed
3/4 cup butter, melted
Pie:
3 tablespoons corn starch
1 & 2/3 cups water
3 egg yolks, slightly beaten
1 14oz can of sweetened condensed milk
2 tablespoons butter
1 teaspoon vanilla
3 bananas, sliced
1 lemon, juiced
Whipped Cream:
1 cup heavy cream
1/4 cup sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
Directions
Crust:
Preheat oven to 350 degrees. Grease 9 inch pie dish.
Mix crushed vanilla wafers, graham crackers, and melted butter together. Press mixture onto the bottom and sides of a greased pie pan.
Bake for 15 minutes, or until crust is golden brown. Cool before using.
Pie:
In medium size pot, whisk corn starch in water until it is dissolved.
Mix egg yolks and condensed milk into water mixture over medium heat. Whisk constantly until thickened and bubbly. Be careful not to burn the mixture!!
When it is thickened and bubbly, remove from heat. Mix in butter and vanilla. Let cool slightly.
Dip sliced bananas in lemon juice to prevent browning. Place bananas in layers on top of cooled crust.
Pour slightly cooled milk mixture on top of bananas. Let chill in fridge for at least 4 hours prior to serving.
Whipped Cream:
Whip together all ingredients until the cream forms stiff peaks.
Spread whipped cream on top of pie.
It's even puppy approved! I'm pretty sure Chase made Scotch lick that so he could eat that piece...
