(green) chili cheese grits
My aunt JoAnn planned to bring these to Thanksgiving last year and she keep calling them "chili cheese grits" on the phone. I pictured her opening a can of chili and dumping the can on some grits, which I am into, but I didn't know if that was a Thanksgiving dish??? Come to find out these babies are GREEN chili cheese grits and they. are. amazing.
Green Chili Cheese Grits
3 cups water
1 teaspoon salt
1 garlic clove, minced
1 cup quick-cooking grits
1/2 cup butter, cubed
1-1/2 cups shredded cheddar cheese, divided
3 tablespoons canned chopped green chilies
2 large eggs
1/2 cup whole milk
In a medium saucepan, bring water, salt and garlic to a boil; slowly stir in grits. Reduce heat; cook and stir for 3-5 minutes or until thickened. Remove from the heat.
Add butter, 1 cup cheese and chilies; stir until butter melts.
Beat eggs and milk; add to the grits and mix well.
Pour into a greased crockpot. Bake on low for 4-6 hours (or on high for 2-4).
Just before serving, sprinkle with remaining cheese.
