(green) chili cheese grits

My aunt JoAnn planned to bring these to Thanksgiving last year and she keep calling them "chili cheese grits" on the phone. I pictured her opening a can of chili and dumping the can on some grits, which I am into, but I didn't know if that was a Thanksgiving dish??? Come to find out these babies are GREEN chili cheese grits and they. are. amazing.

Green Chili Cheese Grits

Ingredients:

  • 3 cups water

  • 1 teaspoon salt

  • 1 garlic clove, minced

  • 1 cup quick-cooking grits

  • 1/2 cup butter, cubed

  • 1-1/2 cups shredded cheddar cheese, divided

  • 3 tablespoons canned chopped green chilies

  • 2 large eggs

  • 1/2 cup whole milk

Directions:

  1. In a medium saucepan, bring water, salt and garlic to a boil; slowly stir in grits. Reduce heat; cook and stir for 3-5 minutes or until thickened. Remove from the heat.

  2. Add butter, 1 cup cheese and chilies; stir until butter melts.

  3. Beat eggs and milk; add to the grits and mix well.

  4. Pour into a greased crockpot. Bake on low for 4-6 hours (or on high for 2-4).

  5. Just before serving, sprinkle with remaining cheese.
