cool watermelon & cucumber salad


It's Wednesday and it's miserably hot everywhere except in Antarctica, so I'll keep it simple. Make yourself this salad and get yourself over that weekday hump!

I've made this salad with and without the feta cheese- it's delicious both ways. It really depends on the rest of the menu. When I made this for girl's night, I was already having blue cheese salad so I left out the feta. Lastly, I make this salad and throw it in the freezer for 15-20 minutes before serving so the watermelon & cucumber are ice cold.

Ingredients:
  • 2 tablespoons honey

  • 2 tablespoons fresh lime juice

  • 1 tablespoons olive oil

  • pinch of salt

  • 1 5 pound watermelon, peeled and cubed

  • 1 english or hot house cucumber, peeled and cubed

  • 15 fresh mint leaves, torn

  • 15 fresh basil leaves, torn

  • 1/2 cup crumbled feta cheese, optional

Directions:
  1. Whisk together the honey, lime juice, olive oil and pinch of salt. Set aside.

  2. In a large bowl or serving platter with sides, combine the watermelon, cucumbers, and fresh herbs.

  3. Top the watermelon salad with the honey vinaigrette and gently toss to combine. Top with the feta cheese (if using) and serve!
